Garlic Lemon Spinach Spaghetti – Quick and Easy Dinner

Sometimes you just don’t have time, you know? Lots of dinners take hours of peeling, chopping and slicing. Nobody has time for that. This Garlic Lemon Spinach Spaghetti recipe is packed with flavour and iron.

Sure, spaghetti is not the healthiest thing in the world, but balance is the key to everything. You can also skip the spaghetti and serve with (brown) rice, (sweet) potatoes, salmon or chicken breast. It is like the colour black, it goes with everything. Enjoy!

Garlic Lemon Spinach Spaghetti (download)

Ingredients:

250 gr Spaghetti

3 cups frozen Spinach

Olive Oil

1 small onion, diced

1 Tsp. Instant Vegetable Stock

3 cloves garlic, chopped

Salt

Pepper

Nutmeg

Lemon Juice

Optional: Parmesan

Instructions:

  1. Boil the Spaghetti.
  2. Blanch the frozen spinach in a pot with salted water and sieve it. Squeeze all the water out.
  3. Put the same pot or deep pan on high heat and pour in some olive oil.
  4. When the olive oil is hot, sauté the onions with the instant vegetable stock.
  5. Add the chopped garlic and sauté until beige.
  6. Add the spinach and sauté that for 2-3 minutes.
  7. Add salt, pepper, nutmeg and lemon juice to taste.
  8. Put the boiled spaghetti into the spinach and mix it up. Use a fork to break apart the lumps of spinach.
  9. Serve with or without parmesan.
