From Pumpkin to Speculoos Spice – DIY Autumn and Winter Spice Mixes

Autumn and winter are prime baking seasons and these spice mixes shouldn’t be missing in your kitchen. It is so easy to make all of these spices at home as you might not be able to buy some of these in your country or they are cheaper to make yourself. Here are the recipes for allspice, pumpkin spice, speculoos spice, lebkuchen spice and Christmas stollen spice. Especially the last three spice mixes are more popular in Germany, Belgium, the Netherlands, Austria and Switzerland and are vital in all autumn and winter baking. These little spice jars make lovely kitchen decorations or a great gift for baking enthusiasts.

Ever since my birthday the kitchen has been in complete disarray going through a major renovation that culminated in needing a new freezer but since my last Ikea trip it is starting to look like a kitchen again. Finally I have an island, a kitchen island made from a Brimnes cabinet and a worktop from the hardware store, but it is the only island I will ever own so I’ll go with it. Now that I have drilled and glued I can finally use it and this was my first little project. I made these spice jars with some little jars I bought at the local equivalent of the dollar store and made some labels out white cardstock, the stripy ribbon makes it look festive. I don’t know whether you can buy all these spices but pumpkin spice and allspice are absolutely new to me. The others I could buy but I as I was already making these mixes I figured that I would make them all. Originally I wanted to put these spices into my homemade baking advent calendar, but they are too nice to hide away until December. The pumpkin spice might not even make it this long as I have been experimenting with it already. If you want your kitchen to smell like the halloween and Christmas you should really try making these mixes, they are better than any scented candle.

Pumpkin Spice

• 3 tbl ground cinnamon
• 2 tsp ground nutmeg
• 2 tsp ground ginger
• 1 ½ tsp allspice corn
• 1 tsp ground cloves


• 1 tbl ground nutmeg
• 1 tbl ground cinnamon
• 1 tbl ground cloves

Speculoos Spice

• 1 tbl + 2 tsp ground cinnamon
• 1 tbl + 1/3 tsp ground nutmeg
• 1 tbl +1/3 tsp ground cloves
• 1 1/3 tsp ground white pepper
• 2 tsp ground aniseed
• 2 tsp ground ginger

Lebkuchen Spice

• 3 tbl ground cinnamon
• 3 tsp ground cloves
• 2/3 tsp ground allspice corn
• 1/3 tsp ground nutmeg
• 2/3 tsp ground coriander
• 2/3 tsp ground cardamom
• 2/3 tsp ground ginger

Christmas Stollen Spice

• 2 tbl vanilla sugar
• 1 tbl + 1tsp ground cardamom
• 2 tsp ground star anise
• 2 tsp lemon zest
