Caramel Pretzel Delight Ice Cream (Cheater’s Version Included)

This Caramel Pretzel Delight Ice Cream is the perfect frozen dessert to treat yourself to on a hot summer’s day. The base is a delicious Philadelphia style vanilla ice cream with a sea salt caramel swirl and chunks of chocolate covered pretzels dispersed throughout. The sea salt from the caramel and the salted pretzels offsets the overt sweetness from the vanilla ice cream, caramel and dark chocolate therefore creating the perfect balance of sweet and savoury. If you have no interest in making the ice cream yourself there is a cheater’s version included as well.

Another heatwave strikes and this one is hotter than the last, almost 40°C (104°F) with only little relieve in sight. It is humid and hot. Most people are sweaty, grumpy and just a little bit on edge especially in traffic. Summer road rage is something else. Hopefully you are all faring better, if not then I have a new recipe for you: Caramel Pretzel Delight Ice Cream. With this weather cooking really been on the back burner yet the ice cream machine has been working overtime. If ice cream recipes do not interest you then I am really sorry. Thee weather will surely turn around soon and I will be cooking properly again. Recently it has been mostly boring salads that even I have been getting tired of. Although when eating only mixed salads you can indulge in the occasional scoop of ice cream, right?Caramel Pretzel Delight has been a great addition to my ice cream repertoire. Even if you don’t like ice cream production, I would certainly recommend making this ice cream or the cheater’s version. It is the best ice cream flavour there has ever been and I don’t use hyperbole lightly, albeit the name is quite clunky. Feel free to recommend a better one to me as I seem to miss creativity when it comes to naming dishes. Some names that were in the running were the following:• Trefoil Delight
• Sweet and Savoury Trinity
• Caramel Chocolate Chunk
• Chunky Swirly Delight
• Naughty Bavarian Ice CreamAlthough the Naughty Bavarian Ice Cream was never seriously in the running, it was definitely my favourite. Something about it just makes me chuckle but also a little nervous that Bavarians would find it offensive and start a pilgrimage to my home to take me out with a day old pretzel. That would definitely make the international news though. Anyway let me know if you happen to have a better suggestion.

Salted Caramel Pretzel Delight Ice Cream

Ingredients:
• 2 cups heavy cream
• 1 cup whole milk
• ¾ cups white sugar
• 1 dash of salt
• 2 tsp vanilla extract
• ½ cup chocolate covered pretzels
• ¼ cup salted caramel sauceInstructions:
1. Freeze the chocolate covered pretzels for at least one hour, this keep the pretzels chunks from getting soggy in the ice cream.
2. Mix the cream, milk, sugar, salt and vanilla extract until the sugar has dissolved completely.
3. Churn the mixture in the ice cream machine according to manufacturers instructions until it has visibly grown in volume by about one third.
4. When the ice cream has almost finished churning, pour the chocolate covered pretzels into a freezer bag and bash them into chunks with a rolling pin.
5. Add the pretzel chunks into the churning ice cream during the last two minutes of the process.
6. Add one half of the ice cream into a freezer friendly container and pour half the salted caramel sauce all over the ice cream. Use a fork to swirl the sauce into the ice cream. Repeat with the other half of the ice cream.
7. Freeze the ice cream for at least six hours or best over night before serving.

Cheater’s Salted Caramel Pretzel Delight Ice Cream

Ingredients:
• 1 pint vanilla ice cream (also dairy free or vegan ice cream)
• ½ cup chocolate covered pretzels
• ¼ cup salted caramel sauceInstructions:
1. Freeze the chocolate covered pretzels for at least one hour, this keep the pretzels chunks from getting soggy in the ice cream.
2. Let the ice cream soften lightly in the fridge for about 10-15 minutes. It should not be melty, just softer to be able to swirl the ice cream.
3. Pour the chocolate covered pretzels into a freezer bag and bash them into chunks with a rolling pin.
4. Add the caramel sauce and chocolate covered pretzel chunks to the lightly softened ice cream and swirl everything in gently with a fork.
5. Put the ice cream back in the freezer until serving.Obviously you could make the cheater’s version in portions or assemble it as an ice cream sundae, it will not change the flavour profile. Many roads lead to Rome as they say, so don’t let not having an ice cream machine stop you from enjoying this delicious ice cream flavour. To make it vegan or dairy free simply use a plant-based ice cream, salted caramel sauce and chocolate covered pretzels, although I don’t know how widely available these ingredients would be to you. I had to make my own salted caramel and chocolate covered pretzels as well, neither are common things were I live. Anyway, I wish you a wonderful and hopefully relatively cool weekend.
