Baked Sweet Potato with Garbanzo and Spinach Filling

This baked sweet potato with garbanzo and spinach filling is not just a delicious meal but also a quick and easy one. Rather than using the oven it was “baked” using the microwave. It was fully cooked and tender in just 24 minutes, just enough time to make the delicious garbanzo and spinach filling. This way baked potatoes can be the ideal mid-week dinner, that is delicious as well as healthy.

Even though I have never been a huge fan of potatoes, as I tend to find them quite bland and boring, I never minded baked potatoes. First of all they are very little work because you don’t have to peel them. I swear I always look for the biggest potatoes at the grocery store so I don’t have to peel as many. It is one of those kitchen chores I really hate. Baked potatoes are also incredibly versatile, because potatoes are so boring they are practically the blank canvas of vegetables. You can fill them with just about anything.

There is one downside to making baked potatoes though and that is that they take ages to fully bake in the oven even if you boil them for a few minutes before hand. That takes a lot of time and energy, which is an effort you may have to put in when cooking for a large family. When cooking two or four people you can easily make baked potatoes in the microwave, that are even more tender than in the oven because they don’t dry out so much. By wrapping the potatoes in a damp dish towel even skins retain some moisture, making it easier to remove the flesh on the inside. That is a nifty little trick that I just discovered, when I saw someone on some cooking video do it with a hot dog bun. It works so perfectly I may never make oven baked potatoes ever again.

Baked Sweet Potato with Garbanzo and Spinach Filling


  • 1 sweet potato per person
  • 1-2 tbl olive oil
  • 1 onion, sliced
  • 2-3 cloves of garlic minced
  • 1 can of garbanzo beans, drained and rinsed
  • 1 big hand of fresh spinach per person
  • salt
  • black pepper


1. Clean and dry the sweet potato well. Then repeatedly stab it with a fork all over, so the steam can escape.

2. Dampen a dish towel or paper towel and wrap it around the sweet potato. Place the sweet potatoes on a plate and put them in the microwave. If you have a baked potato program use that or bake them on maximum. Bake the potatoes for twelve minutes before flipping the potatoes over and make sure to wrap them in a damp towel again. Bake for another 10-12 minutes until a tooth pick easily passes through the thickest part of the potato.

3. While the sweet potato is baking make the filling. Start by sweating out the onions in a large hot pan (with a lid preferably) with some olive oil and salt until translucent.

4. Now add the garbanzo beans and roast them until golden with a lid on (they jump out of the pan whilst roasting), stirring occasionally so the onions don’t burn.

5. When the garbanzo beans have reached the desired colour, add the minced garlic and sauté until fragrant for 30 seconds to a minute. Season everything with salt and pepper before adding the spinach.

6. Add the spinach and sauté until it has just wilted. Season it to taste one last time before serving.

7. Slice the baked sweet potato in half and pull it apart slightly. Put the garbanzo and spinach filling inside and serve.


The sweet potato can be replaced with regular potatoes, just follow the same procedure. They might need a little extra time depending on size and variety.

For a little extra flavour one can serve this with a drizzle of yogurt or ranch dressing.

So there you have a quick and easy way to make baked potatoes in the microwave. Obviously you don’t have to make the filling above, although I highly recommend it, you can fill it with just about anything you like. This overall method certainly makes baked potatoes a more achievable mid-week meal when you don’t have a lot of time to cook. Or maybe you don’t want to spend hours in the kitchen because you would rather do something else. Either way it is a great recipe to have on hand. I hope you have a wonderful day!
