Chipotle Style Fiesta Potato and Tuna Salad

This delicious potato salad variety has everything you need on a hot summer’s day when you want to do little cooking as possible. It has a delicious chipotle style Southwestern dressing that is spicy and a little smokey over potatoes, tuna, red onions, bell peppers, kidney beans (and/or corn if you like), green olives and cilantro. It tastes even better when made ahead, so you can make it when it is still cold and enjoy a delicious meal when it’s too hot to cook. For a low-carb (or lower carb) version omit the potatoes and mix the tuna with the veggies and serve in a salad leave or a tortilla wrap or with a few tortilla chips.


If you are a longtime reader of this blog you might think that I have posted this recipe before. I have and I have not in a way. I am a huge fan of having one basic recipe and then creating variations of that recipe because it makes cooking a lot easier whilst not getting bored eating the same food over and over again. As we are currently going through a heatwave it has been a lot of salads. Here I decided to make a chipotle style Southwestern dressing by mixing mayonnaise and chipotle style hot sauce with lime juice, paprika and chili powder which makes a smokey dressing that is spicy without being overwhelmingly hot. It goes well with the potatoes and tuna, whilst offering a little something different. The onions and bell peppers, fresh or pickled (add another layer of flavour) add some crunch while the beans and cilantro add the fiesta. It is a great side or main dish when barbecuing and it gets tastier when you leave it overnight in the fridge. It is the ideal recipe to prep for a hot summer’s day and a little more substantial than your basic mixed salad. Instead of the tuna you could also use some leftover chicken breast,  turkey or even pulled pork. For a vegan version I’d recommend omitting the animal products and adding more beans for protein. Any vegan mayo of your choice will do and if you cannot find a vegan chipotle style hot sauce (Tabasco Chipotle Sauce is vegan, I checked) use chipotle chili powder instead.

Chipotle Style Fiesta Potato and Tuna Salad


  • 1 kg waxy potatoes, cooked and cooled
  • 100 gr mayonnaise
  • 25 gr chipotle hot sauce (more for a smokier flavour)
  • 1 tsp paprika
  • 1 tsp chili powder
  • salt
  • lime juice
  • red wine vinegar
  • olive oil (for flavour, optional)
  • bell peppers, cubed or sliced*
  • red onion, cubed or sliced*
  • green olives
  • 1-2 cans of tuna**
  • 1 can of kidney or black beans
  • 1 small can of corn (optional)
  • pickled chilies (optional for more heat)
  • cilantro or parsley


  1. Make the dressing in the bottom of your salad bowl by mixing the mayo, chipotle hot sauce, paprika, chili powder, salt, lime juice, red wine vinegar and a little olive oil to taste. You can make it as spicy as you like.
  2. Add cubed potatoes, veggies, tuna, olives and herbs to the bowl and mix everything together carefully not to break the potatoes until well combined. Chill the salad until serving.
  3. Season the salad to taste before serving.  

*Pickled bell peppers and onions add more flavour as well as crunch

** Use as much tuna as you like or replace it with some leftover chicken, turkey or pulled pork

So there you have an easy and delicious recipe for a Chipotle Style Fiesta Potato and Tuna Salad that gives you a lot of options. Cilantro tastes like soap use parsley instead. You don’t have tuna in the house use meat or more beans. You like it hotter add more hot sauce. I like to my recipes as customisable as possible so you and I have options. Who wants to eat the same thing over and over again. I usually make a salad like this for two days in a row and don’t get tired of it. This way I don’t have to cook in the heat or cook the following day. Win-win! This weather is best for ice cream making not cooking.
