Roasting salmon with lemon in the oven is not only an incredibly delicious way to prepare fish but also easy and fast. Make a marinade and brush the fish with it, thow a few lemon slices on top and toast for about twenty minutes. You can serve it with anything.

Who knew that some lightly charred lemon slices would really elevate a dish with very little effort. Sure they add some aroma but mainly they are aesthetically pleasing, so you can make it with some lemon juice from a bottle. I have made this many times as it is such a no-fuss dish that can be served with anything. Mashed potatoes, potato wedges, pasta and rice dishes such as burrito bowls or garlic rice. You could also just serve it with a side salad and some mango salsa.

Lemon Roasted Salmon
Yield: 1 filet per person Difficulty: 1/5 Time: 25 minutes
Ingredients:
- salmon filet, skin on
- 1-2 lemons
- olive oil
- salt
- paprika
- garlic powder
- black pepper
Instructions:
1. Preheat the oven to 180°C.
2. Clean the salmon and pat it dry. Place it in a lightly greased oven dish.
3. Squeeze half the lemon into a bowl and add an equal amount of olive oil. Add salt, paprika, garlic powder and black pepper to taste and mix everything together until fully emulsified. Brush the salmon with the marinade and place the other half of the lemons cut into slices around the fish.
4. Bake the salmon in the oven for 18-20 minutes until golden, brushing it again with the marinade halfway through cooking time. Serve with a slice of lemon.
