Blueberry and Lemon Buttermilk Gelato (or Popsicles)

This blueberry and lemon buttermilk gelato is fruity, creamy, light and delicious. It is the perfect cool treat for summer days. If you don’t have access to an ice cream machine you can just make delicious popsicles. Replace the buttermilk and cream for a plant-based milk to make it vegan.

Here we are again as promised last week with this recipe for blueberry and lemon buttermilk gelato. It has been such a hit that I have already made a new batch this time with blueberries, raspberries and lime, which has also been very delicious. It is lighter, fruitier and not quite as sweet as regular ice cream, which is great considering the overall health trip the world is currently on. Never before have I heard of a workout equipment shortage. Does that mean that protein powder will replace the hoarded toilet paper soon? I have been trying to exercise more and eat better, hence I have been making fewer desserts and I really miss them. Fruit is not dessert but this way it can be. If you want to make it into a healthy popsicle you can skip the cream, which makes it light, airy and scoopable when churned with a machine, and reduce the sweetener. For an ice cream feel I recommend churning it in a machine, ice cream weather is over fast enough. You can replace the blueberries and lemon with any frozen fruit you like that fits the overall tartness of the buttermilk. Be creative and use other berries, cherries, peaches or even a blend of fruit. However you want to enjoy this you can. 

Blueberry and Lemon Buttermilk Gelato (or Popsicles)

Ingredients:

  • 300 gr frozen blueberries *
  • 250 ml buttermilk
  • 100-150 gr sugar (or other sweetener to taste)
  • ½ tsp salt
  • 1 tsp lemon extract
  • lemon juice
  • 200 ml cream**

Instructions:

  1. In a blender or food processor mix the buttermilk, blueberries, sugar, salt, lemon extract and lemon juice until smooth. You can more or less sugar or lemon juice to adjust it to your taste. Lastly mix the cream into it quickly.
  2. To make gelato fill the mixture into the ice cream machine and churn according to manufacturer instructions until the gelato has visibly grown in volume. Transfer to a freezer-friendly container and freeze for eight hours or overnight. 
  3. To make popsicles fill the mixture into popsicle moulds, tap on your counter to remove any air bubbles and freeze overnight until solid. 

*Can be replaced with any other frozen fruit you like

**For popsicles you can omit the cream so they freeze more solid or double the fruit

So there you have an easy recipe for blueberry and lemon buttermilk gelato. I know not everyone has an ice cream machine, so I wanted to give you the option to make it into a popsicle. These moulds you can find quite easily in stores (such as Ikea) or online. I found mine at a “dollar store” and they look just like the Ikea ones. Those are a great thing to have so you can make a healthier treat in the summer. I often just freeze a smoothie in them to limit my summer ice cream consumption. I have been running around with my fitbit so much that sometimes I think it should come with a life alert (they’re expensive enough), I really don’t want to ruin it with all the desserts. This is certainly lower in calories than a lot of store-bought ice creams because you can control how much sugar (or sweetener) you use and when making popsicles you won’t even need cream.
