Stuffed Ciabatta – Quick, Easy and Versatile

These quick and easy stuffed ciabattas make a great lunch or dinner on a busy day. They are also a great way to use up a lot of things that you have leftover before they go bad. My favourite is ciabatta with a garlic sauce, sautéed vegetables and cheese with a sprinkle of chili flakes, but you can make a pizza, chili or even shakshuka stuffed ciabatta. The opportunities are as limited as your own creativity.

Ever since I started making these, they are a staple in my freezer if I have the space. It’s such a great thing to have on hand for a busy, you don’t feel like cooking day. When you some some day old ciabatta loaves at the grocery store, grab a few and make some of these. They’re delicious, filling and comforting. I like to use leftover cheese or garlic sauce, which really is a jazzed up béchamel (Creamy Cheesy Garlic Sauce – One Sauce Many Uses). Leftover chili is also very delicious and hearty. Well, there you have an easy and delicious recipe for stuffed ciabattas. I like that they are very versatile and use up a lot of leftover ingredients you happen to have lying around. You know and control what is in them unlike a frozen equivalent which may have a lot of sugar and fat added. It takes almost zero effort to make extra for a busy day, those sneak up on all of us.
