Spicy Chicken Breast with Mango Salsa and Kale Salad and a Vegan Alternative

Here is a delicious and healthy meal idea that incorporates all the colours of the rainbow as well as a lot of flavour. The mango salsa is a little sweet and tart, balancing the heat of the chicken. I served it with a fiesta kale salad with a basic red wine vinegar vinaigrette and some roasted chickpeas that goes very well with the chicken as well as the mango salsa. Instead of chicken you could make a spicy cauliflower steak and serve it the same way to make this dish vegan.

I don’t know about you, but sometimes I hit a little bit of a rut with my meal planning. Spicy chicken with roasted potatoes and some pico de gallo with some salad in a tortilla or with a side of rice and beans are some of my go-to meals. It is fine, but it is lacking a little diversity. Maybe you also need a little meal inspiration to pair things a little differently.  

I will admit that this is not a new recipe so much as a meal suggestion made from various old recipes. I made the spicy chicken (recipe here) before and the fiesta kale salad (recipe here) is a favourite of mine whenever I can get my hands on fresh kale. The mango salsa was a new thing I tried and it was phenomenal. The mango is not only vibrant and healthy, but the sweetness cuts the heat of the chicken beautifully. It is sweet, salty and spicy. The kale salad is filling, healthy and low-carb.  To make the meal vegan you could make some seitan (recipe here)steaks, spicy tofu or roasted cauliflower (recipe here).   

Mango Salsa

Yield: 4 portions Difficulty: ⅕ Time: 10 minutes

Ingredients:

  • 1 mango, cubed
  • 1 red onion, diced
  • ½ red bell pepper, diced
  • ½ cup cherry tomatoes, diced
  • ½ – 1 tsp red chili flakes
  • fresh cilantro or parsley
  • lime juice
  • sea salt

Instructions:

Mix all the ingredients with a splash of lime juice and salt to taste. 


Well, there you have an easy and delicious meal idea. That mango salsa you can eat with a lot of things such as a spicy burrito bowl with rice or roasted cauliflower. Any leftovers, if you have any, can be eaten with some tortilla chips. Well, I hope you enjoyed this “recipe” and I have to get back to my niece’s birthday cake which is my challenge this week.
